Best Brunch

Hey friends, sorry I have been off the grid for the last few weeks! Life has been pretty jam-packed lately, and unfortunately the blog had to be put on the back burner. BUT I do have some updates for you all, and once I’m done with my class I’ll have some time to get back to blogging for a bit, so don’t give up on the Short and Sweet blog!

In the meantime, I wanted to do another fine dining at home post! I decided to do something a little different and host brunch for my friends to celebrate my birthday.

Sunshine Berry Spritzer

Time: 10 minutes

I found this non-alcoholic punch online and it was pretty simple, so I thought I’d give it a try! It was fairly easy to make, I just mixed orange juice, pineapple juice, a bit of lemon juice, and some club soda together. I also popped in a few frozen strawberries I had. While the punch looked pretty, I will admit it wasn’t the most flavorful drink I’ve had, so I think I’ll look for another punch recipe the next time I make one.

Parfait station

You don’t need a recipe for parfaits, but what brunch is complete without a parfait bar? I had to include a photo because it looked so cute. Also shoutout to my mom for buying me some cute dishes from Michael’s to hold the spoons!

French Toast Bake

Time: About an hour

I LOVE french toast, and this recipe is a tried and true one for me! It’s essentially a french toast casserole, and the best thing about it is that you prepare it the night before and just pop it in the oven the next morning. All you do is tear up a loaf of sourdough bread, pour the egg mixture over it, and stick it in the refrigerator overnight. You can also make the topping beforehand. The next morning you put the topping on, stick it in the oven for about 45 and BOOM – french toast bake. I’d recommend baking it on the longer side to make sure it’s not soggy. It’s also great for leftovers!

Parmesan Baked Hashbrowns

Time: About an hour

This recipe is SO simple yet so good! The only ingredients needed are shredded potatoes, parmesan cheese, salt and pepper, and oil, as well as green onions if you want them. You mix it all up, put it in a greased muffin tin, refrigerate overnight, and pop them in the oven the next morning (can you sense a theme here?). These were a definite hit with my friends and husband, and my coworkers enjoyed them when I made them again the next week!
