Instant Pot Blueberry BBQ Ribs

 

Hey friends! I haven’t done a fine dining at home post for a while, so I figured it was time to share a new meal with you! I got the recipe for the main part of this meal from a recipe-sharing club I started at my work called The Finer Things Club (all you Office fans will understand). I just got an instant pot for Christmas but had no idea what to make in it, and thankfully one of my coworkers shared this great recipe! I have never made ribs before but she made it sound so easy and delicious in the instant pot that I had to give it a try. For reference, this is the instant pot I have.

Instant Pot Blueberry BBQ Ribs

As I mentioned, I’ve never made ribs before, so this was quite a learning experience. I had to youtube how to get the membrane off the ribs, but other than that they were pretty easy to prepare! I just put on the dry rub that the recipe called for and put in a little water and apple cider vinegar, then let it cook in the instant pot for 30 minutes. Meanwhile, I made the blueberry BBQ sauce. I’m a fan of fruit-based sauces on meat because you can get such interesting flavors and textures, so I was pretty sure I would love this sauce recipe. It was really easy to make, although I think I added a bit too much salt since I used garlic salt rather than garlic powder. After simmering for a bit I did a quick pulse blend in my Ninja and it was ready to go! When the ribs were done cooking they were so tender, and I could tell they were going to be amazing. I put the sauce over them and broiled them for about 8 minutes, then they were done! They tasted so good, but if you’re making them I would invite some other people over to help you eat them because it’s hard to finish a whole slab between two people!

Garlic Bread

While the ribs were cooking my husband made his special garlic bread, which basically is a mix of some melted butter, olive oil, minced garlic, salt, Italian seasoning and cheese on top. He then bakes it at 400 degrees until the cheese is a little crispy. It always comes out perfect!

Sautéed Broccoli

The broccoli is another Matt special with olive oil, butter, salt, pepper, and garlic, cooked on low with a lid until it’s tender. At the end he sprinkled on some lemon juice, which was great to balance out the sweetness of the blueberry sauce.
